Arcobaleno

Arcobaleno has functioned as the only full-service pasta machine manufacturer and supplier in North America since its founding in 1995. Originally established in Vancouver, British Columbia, by Antonio and Maja Adiletta, the company relocated to Lancaster, Pennsylvania, in 2002 to expand its engineering and manufacturing footprint. Today, Arcobaleno serves as a primary resource for culinary professionals—ranging from independent boutique bistros to large-scale industrial food producers—seeking to industrialize the production of authentic, artisanal-quality pasta.

The brand is internationally recognized for its comprehensive "one-stop-shop" approach to the pasta-making process, covering everything from flour milling to final preservation. Their core portfolio features high-performance pasta extruders and mixers, such as the AEX18 Jemma, AEX20 Emma, and AEX30 Stella models. These units are engineered for mechanical precision, utilizing water-cooled chambers to prevent dough from overheating during the extrusion process, which preserves the structural integrity and nutritional profile of the pasta. With an inventory of over 150 specialized bronze and Teflon dies, Arcobaleno allows chefs to create an nearly infinite variety of shapes, from traditional rigatoni to complex regional specialties.

Beyond extrusion, the company provides a sophisticated ecosystem of specialized machinery, including automatic dough sheeters, ravioli and gnocchi machines, and industrial-grade pasta dryers. Their pasta cookers and rethermalizers are designed to handle high-volume duty cycles, featuring starch skimmers and automatic water refill systems that maintain water quality and temperature consistency. This vertical integration of equipment ensures that every stage of production—mixing, forming, cutting, and cooking—is optimized for workflow efficiency and standardized quality.

The strategic value of Arcobaleno is anchored by its 25,000-square-foot facility in Pennsylvania, which houses a state-of-the-art test kitchen and an in-house machine shop. This infrastructure allows operators to bring their proprietary flour blends and recipes for hands-on testing and calibration before making an equipment investment. By providing virtual technical support, extensive training programs, and a robust inventory of domestic parts, Arcobaleno ensures that its clients achieve a high return on investment while elevating their menus with the superior texture and flavor of fresh, house-made pasta.
